Strawberry Spinach Salad

1 pint strawberries – thickly sliced
1 bag baby spinach
1/2 red oinion – thinly sliced
Dressing:
1/2 cup Mayonnaise or Miracle Whip
2 TBSP white vinegar
1/3 cup Sugar
1/4 cup milk
2 TBSP poppy seeds (or less if it feels like too many)
Blend together dressing ingredients.
Layer strawberries, spinach and red onion in a bowl.
Pour dressing over salad and toss.
Serve immediately.
NOTES: I like to keep all the pieces separate in the fridge and then my husband and I can make it to our liking. He doesn’t like onion, but I think it is a must. Plus, one batch can last the two of us several meals and I don’t like soggy spinach.
